|Ingredients||4 tbsp olive oil
4 tbsp lemon juice
3 Organic Creative Salmon fillets, 5-6 ounces each
2 cups coarse bread crumbs, toasted (preferably fresh)
3 tbsp capers
2 tbsp melted butter
Salt & pepper
|Directions||Brush both sides of salmon fillets with lemon juice & olive oil.
Place on lightly-oiled baking tray, skin side down.
Sprinkle with salt & pepper, cover with bread crumbs, sprinkle with capers and melted butter.
Bake in preheated 500°oven for 6-8 minutes.
